if you cannot find the recipe on a search engine than you are going to have to wing it. Now this can be "the mother of creation" I love to cook so when im in the kitchen and know a recipe or get one from a book I will make it the same way the first time and then change it up 3+ times to make it even better. My advice to kind of "experiment" without ever having seeing or tasting the joe crab shack version is to boil the potatoes to give them in a really good texture inside-leave the skins on. Then bake them for the right crisp outside. while that's all happening you can either make a home made alfredo sauce, id pump it up with some extra spices than just the nutmeg, or use a good jar version and add some extra spices to enhance the flavor with the potato. Hope this helped give a direction, with cooking you can always try again if it doesn't work the first time. On another note since you have actually had the meal if you noticed that it was only baked you can just do that, i like boiling first to give the inside an extra cook, its how i make home made fries, boil than fry (twice).

I'm sure you could go to a search engine and try to see what recipes pop up or next time you go there to eat them list what you think you see and taste in the potatoes and try making it on a whim.
