I'm not sure what you consider "5-Star" but i would highly recommend the 'Rosewood Grill' just a few feet off of the strip.
I have eaten at almost every restaurant in Vegas (seriously) and I have yet to equal the dining experience that I had at the Rosewood Grill. I went in with my better half just after walking the strip and goofing around, we were both wearing shorts and button down 'touristy' shirts with palm trees on them if I remember correctly. The maitre'd was gracious and friendly to us and seated us immediately. Our waiter was quick to the table and extremely curteous. Having been dressed a little less than appropriate I somewhat expected to be given the "back-burner" service you get at other places when inappropriately attired. The food came out quickly and was prepared as promised. I had a 4.5 lb Lobster and she had a plate of King Crab that rivaled that shown on Discovery Channels 'Deadliest Catch'. I kid you not the food was awesome , the service excellent, and the atmosphere was very friendly. The ladies in all dinner parties get roses when they ready themselves to leave, Too Cool. I spent no more there than we would have spent eating at a Red Lobster and the experience was one of sheer enjoyment. We are heading back the 19th of July and the Rosewood Grill is at the top of our MUST SEE list. Trust Me You'll LOVE IT! Check out Shucks Tavern %26amp; Oyster Bar at 2090 E Serene Ave. Looks like they have a fine choice according to their menu.
Or there's the Costa Del Sol Seafood Restaurant at 1301 W Sunset Rd.
Then there's the Texas Star Oyster Bar at 2101 W Texas Star Lane.

The Rio has 2 Buffet's, one offers nothing but Seafood ($32.00 a person). I have not eaten there, but have been told it is well worth the money.
Rio has an all you can eat seafood buffet. I'd rate it 4 star.
